The Culinary Department at APEX Rehab spansnutritional-cuisine beyond the scope of your typical gourmet meal. We provide a variety of programs that focus on nutrition, physical health, and a diet that is closely connected to integrative medicine and holistic healing.

We believe that every single meal prepared here lays the foundation for a nutritionally balanced body. Each ingredient is woven into a dish not only for taste but for the health benefit it offers. For example, when making a dish like curry the chef questions which ingredients will create the perfect dish as well as the nutritional benefits that an individual in recovery requires. An ingredient as simple as ginger is added to the curry to release a variety of healing properties, which include antioxidant effects, an ability to inhibit the formation of inflammatory compounds, and direct anti-inflammatory effects.

APEX Rehab, as a premiere alcohol and drug rehab in San Diego, is focused on local, organic, and natural foods. We source ingredients though a partnership with Farm Fresh to You delivery, which provides organic produce from its farm in Southern California. At APEX Rehab, our executive chef prepares all items from scratch from the organic house-made mint chip ice cream to the hand-crafted mango vinaigrette.

APEX Rehab has an Integrative Beverage Program as well. The essence of this program is to harness the natural healing benefits of certain beverages such as tea and coffee to aid the body in its recovery. A new blend of iced tea is made daily not only for refreshment but for the wealth of benefits different types of tea offer. Chamomile tea is brewed for its relaxing qualities enabling clients to wind down and focus on a good night’s sleep. We also offer French-pressed local and organic coffee varieties in an effort to provide our clients with the best quality Java nature has to offer, as well as to encourage the healthy benefits for the heart coffee contains.

APEX Rehab provides a nutrition program run by our experienced executive chef, who has personal training and nutrition credentials, as well as a degree in culinary arts and food science. A sample outline for the weekly class includes a comprehensive background on carbohydrates, proteins, and fats, calorie amounts in each category, healthy caloric intake guidelines for the average male/female, discussion of client’s food likes and dislikes and which are healthy choices, and providing clients with the tools/resources to make healthy dietary choices. Clients fill out a health/nutrition questionnaire, which is designed to provide clients with the tools necessary to make healthy decisions when it comes to nutrition, as well as the opportunity to nourish their body with all that it requires. The Health and Nutrition Program can take clients to the backyard, where the herb and vegetable garden stands, or to the kitchen for a healthy cooking lesson by our executive chef.

When you arrive as APEX Rehab’s Mt. Helix homes, the unique presence of the properties are evident. The bamboo, the hand laid brick paths and courtyards, the tropical landscaping, the view, the privacy, and the overall sensitivity of the property are undeniable. The homes boast large pools and Jacuzzis for recreation or exercise and multiple private sitting areas for fellowship amongst residents, or private meditation. Above all, it conveys the ultimate feeling of safety and privacy, which allows our residents to settle in and focus on building a strong foundation in recovery.

The homes are as unique as the property and location. Large windows flank the living room with a beautiful interior courtyard on one side and an amazing view of the neighborhood and Mt. Miguel on the other. With the elevated foundation, the homes hover over the large swimming pools in the back and feels perfectly perched on the side of Mt. Helix.

The interior of the homes play an important role in the comfort of our residents. Our goal was to provide a space that is comfortable, inviting, homey and unique. Colorful artwork hangs everywhere. Eclectic furnishings add to the inspiring element APEX Rehab possesses. Large chalk boards hang in the bedrooms, which allow our residents to express their creative sides. Mid-century modern and contemporary furniture and art give our home a youthful vibe that you would expect to find in a Hollywood hills home or boutique Palm Springs hotel.

APEX’s homes have male and female bedrooms, including shared suites and private suites. Additionally, we offer the option of an executive suite, which includes separate closet spaces, individual bathrooms with dual sinks, full bathtubs, and décor that adds to the overall charm of this highly designed home. All rooms are quiet, private and offer views of the patios, courtyard or swimming pools. Clientele will also be made comfortable with full housekeeping services to ensure their stay is no different than a high-end bed and breakfast.

At APEX Rehab, we follow a holistic approach to treating substance abuse and addiction. Years of abuse, as well as the poor eating habits that tend to accompany addiction, lead to a buildup of toxins within the body. While detoxification is the first step to cleanse the body, we also want to replenish it with the proper foods and supplements to create homeostasis. We provide on-site nutritional counseling to all of our residential patients and work with them to ensure their nutritional goals are met post-treatment as well. Our integrative physician works in conjunction with our chef to provide individually tailored meal plans and appropriate foods in order to maximize recovery, health, and long-term wellness to each participant. For our alcohol and drug rehabilitation in San Diego we always utilize organic ingredients, reduced fat, and often vegetarian options, with the ability to go gluten free as well.

Our chef is in charge of ensuring our ingredients are of exceptional quality. Some of the herbs and vegetables are grown in our own garden, while others are obtained from local organic farms through the service Farm Fresh to You.

Our approach to nutrition runs on two levels. Our immediate goal is to restore the balance to the body. This is absolutely necessary, because patients need nutrients to be able to attend the therapeutic sessions and perform activities.

However, we have a goal for the long-term as well. The goal of our and every other rehab is for the patient to be able to continue on the road to recovery when the rehab is over. To maximize the chances for success, our chef works to educate the patients on how they should manage their diet.

Food provides support in fighting cravings and preventing relapse. First of all, a well-balanced diet of regular healthy meals will effectively control hunger. Addicts who go through rehabilitation on their own or without sufficient support frequently make the mistake of misinterpreting hunger as craving, which increases the risk of relapse.

In addition to this, recovering addicts should also learn how to approach food to feel better. This is an important piece of the overall puzzle of recovery – at APEX Rehab, we aim to teach our patients how to take proper care of themselves on every level, so that they truly experience the joy of new life. Our goal in nutritional implementation treatment is to reduce the body’s toxic load and replace key vitamin and mineral deficiencies through diet. At our residential facility in Mt. Helix, CA, our personal chef caters to the individual nutritional needs of each patient. By using plenty of fresh, organic ingredients whenever possible, our meals nourish both the body and the mind.

Different addictions cause different health problems. Alcohol is associated with deficiencies in vitamin B complex and folic acid, which can cause anemia. Alcohol also has a detrimental effect on the pancreas and the liver. Severe abuse can lead to a very serious impairment of the liver called cirrhosis. High blood pressure is a common trait among those who abused alcohol and it’s also possible to develop diabetes.

Opiates are known to negatively impact the gastrointestinal system. This is made obvious during rehab, when these patients have problems with nausea, vomiting and diarrhea.

Cocaine, methamphetamines and other stimulants can lead to serious malnutrition and imbalances in electrolytes because they significantly reduce the user’s appetite.

Despite the substance-specific differences, all addictions generally cause malnutrition and dehydration. This is partly because of the impact of alcohol and the substances and partly because when individuals are in the grip of addiction, they disregard their diet and nutritional needs.

It has been found that if recovering addicts don’t pay attention to what they eat and when they eat, they are likely to interpret hunger as craving and turn to abuse again.

Another reason why we place so much importance on nutrition during recovery is because people who are recovering from addiction are likely to overeat if they are not supervised. When they stop using, they suddenly feel the appetite and the sense of taste coming back. It’s our belief that exercising the mind is just as important as exercising the body. That’s why daily meditation is a part of our holistic addiction treatment. Whether guided by one of our therapists, joining in on group meditation or meditating solo, we provide a calming, beautiful environment in which to clear the mind. As part of our integrative treatment programs, meditation reduces stress, lowers blood pressure and helps patients focus more clearly on their end goal: recovery.

Daily meditation is useful in all stages of recovery. During rehab, it can improve the patient’s clarity of mind and give them more control over their emotions. Early rehab is a sensitive time, when the body and the mind alike are struggling to get used to a life without alcohol or substances. For physiological and psychological reasons, the thoughts and emotions of a patient can feel as if they were on a roller-coaster.

Meditation is about mindfulness. That means directing one’s attention to their body and mind in the present moment. It is about being aware of and paying attention to one’s thoughts, feelings and emotions in an accepting, non-judgmental way. That is a new skill for a recovering addict for two reasons – addiction is for the most part a method of running away from one’s body and mind and secondly, addicts have to learn to accept what they think and feel.

In addition to conventional therapies, we offer an outdoor program for our alcohol and drug rehab in San Diego, which allows patients to explore and enjoy the natural surroundings of the area. From beach outings to nature hikes and more, our holistic care offers the perfect mix of outdoor activities. Getting outside in nature helps patients relax and destress, get much needed vitamin D and get in touch with their spiritual side, all of which aids in their healing.

The healing powers of nature were recognized ages ago. In ancient Japan, there was a practice rooted in the philosophies of Shintoism and Buddhism which literally translated as “forest bathing”. The outdoor therapy as such was formally established toward the end of the seventies with Colorado Outward Bound’s Alcohol and Drug Courses. However, the beginnings were documented somewhere in 1800s, when the psychiatrists working in mental health institutions noticed that their patients were much calmer and more sociable in nature.

Doing some physical activity in the nature is part of holistic healing. Activity improves the level of fitness, lowers stress hormones and increases the levels of oxygen in the blood, all of which contributes to well-being and clarity of mind. Connecting with their thoughts and bodies, patients can process the insights from the more traditional forms of therapy.

Outdoor therapy is interesting not only because of the variety and a change of setting, but also because it uses the natural challenges to allow patients to practice their self-reliance and control. This is something a recovering addict works on in therapy – how to control negative thoughts, how to resist the impulse to start using again and how to trust oneself. Outdoor therapy enables them to experience these notions in a different, hands-on context.

Outdoor activities like hiking, mountain climbing or rock climbing provide a metaphor for the challenge that recovering users are dealing with. Conquering the goal increases self-esteem, which tends to be low with alcohol and substance users.

Outdoor activities have a social element to them, too. Group activities foster teamwork and a sense of community. Feeling closer to the other members of the group, they feel less isolated, which is beneficial for the treatment.  

Spending time outdoors is similar to meditation and yoga in the sense that it can help the individual to find a path of spirituality. The feeling of being one with the nature is difficult to explain, but easy to feel.

Finally, exploring what nature has to offer is a chance for the patient to find something positive to do in their free time. Boredom and a lack of direction easily set the mood for relapse, while outdoor activities can provide a way to fill that time in an affirmative way.

Our counselors and therapists encourage patients to get and/or stay active during their treatment. Not only does exercise aid the body in drug and alcohol detoxification; it also relieves stress and anxiety, improves sleep and can ease depression. We provide daily opportunities for our in-patient residents to exercise, either through cardiovascular activities, weight training and/or yoga.

Our treatment programs for alcohol and drug rehabilitation in San Diego start with helping the body get rid of toxins. The physical aspect is the most superficial and the most notable level of addiction. Healing the body at APEX Rehab includes appropriate medication, nutrition and an exercise regimen. Why? Exercise is said to be one of the pillars of health. When people are abusing alcohol and drugs, they generally ignore their health and the state of their body. Exercising helps them restore the physical well-being.

Recreation is also important for the brain physiology. Addiction alters the natural production of chemicals in the brain and disrupts the mechanisms for producing hormones and neurotransmitters that make us feel calm or happy. When we exercise, the brain is again encouraged to produce endorphin, which is a “feel good” chemical. At the same time, it lowers the production of cortisol and adrenaline, which are stress hormones. This is the way exercise fights off anxiety, depression and sleep disorders.

There is a host of other, indirect benefits to exercising during addiction recovery.

Exercising can fill up the patient’s free time. Once individuals are out of rehab and back to their lives, every day is a battle to stick to sobriety. They need all the help they can get – counseling, psychotherapy, alternative therapies, meditation and exercise. If they have something positive and constructive to do and occupy themselves with, recovering addicts will stay better focused on their recovery. With a well-structured day, they will have less opportunity to dwell on negative thoughts and emotions.

Exercising is also called “meditation in motion” by the Mayo clinic. It’s impossible to keep negative thinking at bay all the time, but it’s best to engage our mind with thoughts when we are exercising. Negativity is naturally released through our activity – at the end of the practice not only do we leave the disturbing thoughts behind, but we are filled with the natural high from endorphin.

Exercise gives the individual opportunities to reconnect with their body and listen to its signals. On the other hand, it is also a chance to socialize. Isolation is an enemy of recovery and drastically reduces the chances of success.

Even though exercise is highly conducive to addiction recovery, it’s important to have a professional who can guide and monitor the patient’s exercise regimen. A qualified and trained professional can assess what plan would suit the patient’s level of fitness and health state and also provide the right amount of challenge. There is a risk of overtraining when former addicts start exercising, because they can become overly enthusiastic. This can result in injuries or them running out of steam – neither of which is desirable. A professional will also monitor the patient’s progress, because the true benefits of recreation can only be reaped through regular commitment.

In APEX Rehab art therapy, creativity and art-making processes promote healing and encourage the development of insight into life situations and traumatic experiences. It is the stories in the images that help lead the process of healing. An art therapy session begins with the therapist working with the client to create a safe, healing environment and a trusting relationship.

 

According to the American Art Therapy Association, art is made in this way “within a professional relationship, by people who experience illness, trauma or challenges in living”.

 

Clients are encouraged to use materials such as clay, paint, markers, and other artistic supplies to explore memories, life stories and experiences. This gives the client the opportunity to transform conflicts and crisis into healthy solutions and perspectives.

 

Creating images is an especially old form of communicating, older than writing. By creating imagery through doodles, and playing with colors and shapes, clients may safely express what is too difficult to talk about. This process facilitates not only the expression of feelings, but addresses how to deal with feelings in the right context – in a way that is not destructive to the individual or others. This can be of singular help in combating the urge to relapse.

 

The art therapy process teaches clients the skills to manage their emotions and assists in dealing with serious addiction issues such as anger. The concrete nature of art materials and art making naturally enables patients to remain in control of their own processes, thus allowing them to feel a sense of control as they learn to cope with these intense emotions.

 

Art therapy can be conducted in a group and in that case, it has the added benefit of promoting sharing and closeness. Not only one’s own artwork, but the artwork of other members of the group can bring the individual closer to valuable insights and revelations.   

 

When it’s done outside group, the creations can be used as an excellent starting point for self-reflection and journaling. It is an additional opportunity for the patient to dig deep into how they are feeling about their past, present and future and the conclusions reached can facilitate the progress in other therapies that seek to change the negative thought patterns and balance accepting painful emotions and working to change them.

 

It wasn’t until relatively recently that art therapy has been recognized as a valuable and respected form of therapy in clinical context. It is now used not only in addiction recovery centers, but also in mental health institutions, prenatal classes, prisons and grief counseling centers.
